Roast Beef and Bacon Wraps with Spicy Chili Lime Mayo

We made these for dinner last night and they were pretty darn good. Especially considering it took a whopping 10 minutes to make (just because the bacon needed to cook). Definitely something I would make again on hot summer days when I don't feel like slaving away in the kitchen.

4 (10 inch) flour tortillas (heated so they roll easily)
3/4 lb. thinly sliced roast beef
8 slices bacon, cooked until crisp
1 ripe avocado, pitted, peeled and sliced
4 small leaves romaine lettuce
12 thin red onion rings


Spicy Chili Lime Mayo
1/3 cup mayo
1 Tbsp. lime juice
1 tsp. chili powder
1/4 tsp. cayenne
1/4 tsp. salt
Mix in a small bowl until combined.

Spread 1/4 of the mayo mixture over the bottom half of each tortilla within 1 inch from edges (we definitely didn't use that much. We had extra left over). Divide roast beef, bacon, avocado, lettuce, and onion evenly over bottom half of tortillas. Tuck in sides of tortillas; roll up tightly to enclose filling. Cut in half to serve.

Did you use an actual roast or roast beef sliced at the deli? I would love to make these!

I was going for fast and easy I just bought sliced beef. But if you have an actual roast let me know how it goes!

Thanks Shannon! I'm gonna try it with an actual roast when I have left overs from Sunday dinner. I was thinking that in my mind at the time, but for now, yeah I'll get it straight from the deli so that it'll be quick! I'm sure it'll be good both ways.
