I got this recipe when I was in Chile and it is the best enchilada sauce I have ever had. The lady was from Mexico so it is pretty authentic. We had it last night and it was awesome.
1/4 cup oil
1/3-1/2 cup flour
1/2 package of taco seasoning
2 TBSP chili powder
1/2 tsp salt
1 clove garlic
2 cups cold water
1 can tomato sauce
1/2 tsp baking soda
Heat the oil and add the flour. Mix. Add the seasoning, chili powder, salt and garlic. Stir together in oil mixture. Add 2 cups of cold water and tomato sauce. Stir until it thickens. Add baking soda.
