So I have been a bum and haven't been trying any new recipes lately but here is a great cookie recipe. They each cook perfectly and look very nice so if you need to bring cookies somewhere- these will get you some pats on the back ;)
3/4 cup peanut butter
3/4 cup powdered sugar
1/2 cup butter, softened
1/4 cup peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 egg white
1 tsp. vanilla
1 1/2 cups flour
1/2 cup cocoa
1/2 tsp. baking soda
2 Tbsp. shortening
1 cup powdered sugar
1/4 tsp. vanilla
1-2 Tbsp. milk
Beat peanut butter and powdered sugar together until smooth (we added a little extra peanut butter but it was still a little crumbly but it still worked). Roll into 30 3/4" balls. Cover and refrigerate for 30 minutes.
Cream butter, peanut butter, and sugars until light and fluffy. Beat in egg white and vanilla. Combine flour, cocoa, and baking soda; gradually add to creamed mixture until blended. Roll into 30 1-1/2" balls.
Using floured hands, flatten chocolate balls and shape one around each peanut butter ball, sealing edges. Place 2 inches apart on greased baking sheets.
Flatten with a glass dipped in sugar. Bake at 375 degrees for 7-9 minutes or until cookies are set and tops are cracked. Cool for 1 minute before removing to wire racks.
If you wish to ice them: beat shortening and powdered sugar until smoother. Beath in vanilla and enough milk to reach desired spreading consistency. Spoon into a resealable plastic bag or pastry bag; cut a small hole in corner of bag. Pipe icing over cookies in a zigzag pattern.
