
1 cup finely crushed plain tortilla chips
(for best results, crush in food processor or blender)
2 tablespoons vegetable oil
2 tablespoons lime juice
1 tsp. honey
6 boneless, skinless, chicken breasts (about 6 oz. each)
1 can (14.5 oz.) Mexican stewed tomatoes
1 teaspoon dried cilantro (or 2 tablespoons fresh)
¼ teaspoon chili powder
¼ teaspoon garlic powder
1 cup grated Jack cheese
Place finely crushed tortilla chips on plate.
Combine oil, lime juice and honey in a shallow bowl.
Dip chicken breasts in oil mixture, then press in chips.
Place on a greased jelly roll pan with sides.
Bake at 350 degrees for 25 minutes or until chicken is cooked through.
While chicken bakes, puree tomatoes, cilantro, chili powder and garlic powder together in food processor or blender to make a sauce.
Remove chicken from oven and spread evenly with sauce.
Sprinkle with cheese. Continue baking until cheese melts, about 5-8 minutes

This sounds yummy! It sounds VERY similar to my Mexican Lime Chicken I posted earlier, except mine just used salsa instead of making your own sauce. Did you try it already? Was it good?

I haven't made it yet, but that's because I don't have cilantro- I'm going to make it tomorrow night. Mmmm Mmmm Mmmm!!
I am glad you posted that because the recipe Sarah posted had been on my to make list and I never did and have since forgotten about. It sounded so good at the time and it still does, I will have to try it out. Thanks Sarah and Hannah :)
Hannah, it's nice to have variety. :) We never have cilantro, but if we ever do, I'll have to try this one to compare.

You never have cilantro?!?!?!? I think I get cilantro on every trip to the grocery store. Anything taste better if it has cilantro in it (in my personal opinion). So what then is your first favorite meal Sarah?
Shannon, my favorite meal is the Chicken Azteca... I think you've tried that one!
Yes, we have made that one many times and love it! We tried making it with leftover turkey from Thanksgiving but it wasn't very good.
