Blackberry Muffins

Took me long enough huh! I almost forgot. I am going to make these again tonight so we can have them in the morning! They are pretty yummy. The best part is that the recipe is SOOOOOOO simple. I think the blackberries just add such a great taste, that the muffins taste great even if though the recipe is very basic and simple. Here you go:

1/2 c. shortening
1 1/4 c. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 c. fresh or frozen blackberries

Cream shortening and sugar; add eggs one at a time and blend. Add dry ingredients alternately with milk. Fold in berries. Bake at 350 degrees for 25-30 minutes. Makes 18 muffins. (I think we might've had even more!)
