We got this recipe from David's aunt, and tried them the other day. They were really good! We actually didn't have any tomatoes or an onion laying around so we made it without, and it was still great.
1 Tbsp. olive oil
1 Tbsp. chili powder
2 tsp. finely chopped garlic
3/4 tsp. salt
1/2 tsp. pepper
1 1/2 pounds (4 medium) potatoes, cut into 1/2 inch thick wedges
1 medium onion, cut into 1/2 inch wedges
1 1/2 cup halved cherry tomatoes
1/3 cup coarsely chopped fresh cilantro leaves
1 Tbsp. fresh lime juice
Heat oven to 425 degrees. Spray cookie sheet and combine oil, garlic, chili powder, salt and pepper on it. Add potatoes and onions and toss to mix well. Bake 25 minutes. Add tomatoes and bake 10 more minutes. Transfer to large bowl and add cilantro and sprinkle with lime juice. Toss lightly.

mmmmm that sounds yummy! We love potato things. Now that I have all these recipes, I need to start trying some of them!
